On Wednesday and Saturday mornings, the market in Rodez, Aveyron’s main city (with a population of just 58,000) bustles with vendors selling foraged mushrooms, local cheeses, and specialties like farçous (savory swiss chard patties) and gateau a la broche, a cake grilled over a spit. Come early and you might spot legendary French chefs Michel and Sebastian Bras eyeing the vegetables and herbs for their three-Michelin-star restaurant, Bras, located about an hour away near the village of Laguiole (known for the knives of the same name).
